At a time when this lifestyle was a true rarity, Henry S. Salt presented in this work, a precursor to the issue, a defense of vegetarianism. Influenced by the moral utilitarianism of his time and a follower of strict rationalism, Salt goes through a multitude of debates on vegetarianism with an analytical and rigorous method, from the moral perspective, its relationship with physical and mental health and animal suffering, to the possibilities of a social reform of the diet. In nine concise essays, the British author addresses the arguments in favor of vegetarianism and systematically dismantles the usual objections of his time. However, time has only added validity to this text, which represents a magnificent historical testimony of one of the first practitioners and defenders of vegetarianism in Europe and an essential contribution to clarifying current debates, such as those surrounding to what is now called "animal ethics". His work influenced Mahatma Gandhi, whose intervention text at the London Vegetarian Society in 1931, in which he praises the figure of Salt and highlights the importance of this book, is also included in this volume.
