Comprender el vino

This book is the result of what I like most about wine: thinking about it. Try to understand it beyond its natural and cellar conditions, and find out the why. Nothing is fixed in wine. Science and technology reduce natural limitations, fashions give advantage to new areas and politics sets the framework in which it will be commercialized. The wines tell us a more or less recent past, that of the times when their vines were planted and that of the season of their grapes. But they can also tell us something about the future, due to its possibilities, its commercial avenues. And knowing that there is no wine, but an infinity of wines. Do not expect to find on these pages reviews of wineries or wines, or explanations about viticulture or oenology. For this, there are a large number of books that I would not know how to add value to. Nor do I want to freak out with large amounts of data. I have wanted to focus on precise matters and express facts and opinions that have a clear consequence on the profiles of the wine.
