100 plats indispensables de la cuina catalana

Catalan cuisine -repeatedly, through Ferran Adrià and Joan Roca- has been declared the first in the world. In this book, as a "canon", we will discover which are the indispensable dishes of this cuisine, those that have inspired the great chefs, that form our historical palatal memory and our life, and even some of those cooked by the great chefs. We will see how Catalan cuisine is both archaic, well-constructed, inventive and evolutionary; a challenge to pleasure and a cultural heritage worth preserving.
