In recent decades, a revolution in food science and technology has taken place that has led to an astonishing growth in the manufacture and consumption of food. The amount of diets, culinary preparations, food information, etc., that the consumer can access is enormous and complicates the choice of healthy foods. At the same time, overweight and obesity have spread throughout the planet, affecting people of all ages, cultures and social classes; Associated with overweight, it increases the incidence of some cardiovascular and neurodegenerative diseases, as well as diabetes and cancer. Despite the above, it is more and more common to hear the expression "ultra-processed" foods and advertising and supermarkets are flooded with these products. What are ultra-processed foods really and how have they found their way into our shopping baskets? Are they really responsible for the metabolic diseases that we are suffering from? What can consumers and institutions do to reduce their consumption? Are mobile applications that show the food information of each food really useful when we go shopping?
